Samsung booked us to feed their team at Sydney Olympic Park. Lunch, one window, a big crowd all free at the same time. We rolled in the Birdman truck with Korean fried chicken, the crowd favourite, plus a veg option so everyone was covered, and cooked the lot fresh on site. The booking was for 450, and we fed the lot in an hour. The whole point of a day like this is to treat the team, so the food has to be worth stepping away from the desk for.

No tricks, either. Nothing was made ahead, and it all went out of the one hatch. We ran three menu items and five crew: one on the fryer, two plating up, one handing out and one keeping everyone restocked. Everybody knew their job, and we just pumped it out.
